"Nice Cream" Summer Recipe

There's nothing quite like  summer nights in San Diego - cool breeze, beautiful sunsets and endless BBQs at the beach. And of course, we like to keep those healthy BBQs actually healthy. We're ditching the chips, sugar loaded cookies and dairy based ice cream for one of our favorite sweet treats, "Nice Cream"! 

Ingredientes:

4 medium ripened banans, sliced and frozen
1 Tablespoon pure maple, coconut nectar, agave or other sweetener of your choice
1 tsp Pure vanilla extract

Directions:

1. Add banana to a blender or food processor. Blend until bananas turn into a crumbly mixture.
2. Add sweeter of choice and vanilla. Blend until smooth and creamy, scraping down the sides of the blender as necessary. 
3. If you like a soft serve ice cream texture, enjoy immediately. If you prefer your ice cream firm and scoopable: Pour into an airtight container and freeze for at least 4 hours or until completely frozen. Allow to thaw 5-10 minutes before scooping. 

Serving Size:

2-3 cups, enough to share! 

You can make this even more fun by adding any of your favorite boosts! Such as: cacao, peanut butter, almond butter, cacao nibs or coconut flakes. This base recipe is really great, but I encourage you to explore additions that will satisfy all of your ice cream cravings!
