Raw Rainbow Salad with Lemon Tahini dressing

With summer right around the corner, it's only natural to be looking for ways to to clean up our diets. This simple salad is packed with tons of raw nutrients, fiber and even a hefty dose of plant protein! Did we mention is super easy to make too? 



For the noodles:

You will need a spiralizer. If you do not have one, don't fret, you can use a potato peeler and ribbon your veggies instead. It might look a little different, but it'll taste just as good!

  • 3 carrots
  • 3 zucchinis
  • 2 beets

Spiralize all ove the above, drizzle with lemon and set aside.

For the dressing:

  • 1/4 cup Tahini
  • 2 garlic cloves
  • 1/2 cup lemon juice
  • 1/4 cup nutritional yeast
  • 3 Tbsp extra virgin olive oil
  • 1 tsp himalayan sea salt
  • 2-4 Tbsp water (or as needed)

In a blender, add all ingredients and blend until smooth. 

For the toppings:

  • 4 Tbsp hemp seeds
  • 1/4 cup pepitas 

Plate your noodles in a bowl, Separating the different colors in straight lines to create a rainbow effect. Drizzle with your lemon tahini dressing, and finish with your hemp seeds and pepitas.
